A boutique winery located in the famed Coonawarra, in the Limestone Coast Wine Zone of South Australia, Hollick produces wines only from estate-grown fruit. Coonawarra is recognized as one of Australia's finest wine regions and is particularly known for Cabernet Sauvignon, which responds exceptionally well in its red terra rossa soils over limestone. Pure underground water and a long cool ripening season for the grapes produce wines of elegance and longevity.
This old vines Cab shows classic and distinct regional aromas of eucalyptus and green olives, pencil shavings and cedar alongside toasted brown spice, black currant, mulberry and plum. It is fresh and savoury and has notable savoury tastes of brined green olives, tomato leaf, wild berries, toast and tobacco.
Great balance and structure.
